When using a smokehouse, there is a large temperature difference at the exit of the combustion chamber and at the chimney. Joe’s Barbeque solves that problem with this 16-inch reverse heat flow smoker. A reverse airflow plate means that the hot smoke passes under it (the plate) towards the end of the smoking chamber and then rises up. The temperature and smoke are distributed evenly in the cooking chamber and then exit through the chimney on the right, which is located next to the combustion chamber.
The big hit with this barbecue technique, however, is the low temperature differences in the cooking chamber of only around 3°C. This offset smoker can be loaded to the max and do its unparalleled job. We see that not everyone fills their smoker with 150 kg of delicacies almost every day.
